Chicken & Cheese Tortilla Pie

 TOTAL TIME: Prep/Total Time: 25 min.

YIELD: 4 servings.

Ingredients

  • 1 can (10 ounces) green enchilada sauce
  • 8 corn tortillas (6 inches)
  • 2 cups coarsely shredded rotisserie chicken
  • 2 cups shredded cheddar cheese
  • 1/4 cup sliced ripe olives
  • Salsa, optional

Directions

  1. Preheat oven to 375°. In a small skillet, warm enchilada sauce over medium heat. Dip four tortillas, one at a time, in sauce to coat both sides; arrange on bottom of a greased 9-in. pie plate, overlapping to fit.
  2. Layer with 1 cup chicken, 1 cup cheese and 2 tablespoons olives. Repeat tortilla and chicken layers. Pour remaining enchilada sauce over top. Sprinkle with the remaining cheese and olives.
  3. Bake 10-15 minutes or until heated through and cheese is melted. If desired, serve with salsa.

Crispy Beefy Cheesy Wraps

Ingredients

  • 1-pound ground beef
  • salt and freshly ground black pepper
  • 2 1/2 teaspoons chili powder
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon garlic powder
  • 2 Tablespoons water
  • 15 ounce can black beans, drained and rinsed
  • 1 cup corn canned or frozen
  • 1/2 red bell pepper, chopped
  • 1 green onion, chopped
  • 1 cup cooked rice white, brown, or rice pilaf
  • 1 1/2 cups freshly shredded cheddar cheese (or Monterey or pepper jack)
  • 1/2 cup sour cream or plain Greek yogurt
  • 6-8 large flour tortillas

Instructions

Add the ground beef to a large skillet over medium heat. Cook and crumble until browned. Drain grease.
Season with a little salt and pepper and add chili powder, cumin, garlic powder and water. Stir to combine.
Add black beans, corn, bell pepper, and onions and toss to combine. Saute for a 2-3 minutes.
Warm the rice. Layer tortilla with a handful of cheese evenly spread across the tortilla.
Add a small scoop of rice, placing it in a line along one end of the tortilla.
On top of the rice add a few small dollops of sour cream, and a spoonful of the beef filling. Starting at that end, roll the tortilla up, folding in the sides like a burrito.
Heat a large skillet over medium high heat. Add a tablespoon of oil to a skillet or spray the skillet generously with cooking spray. Place the wraps seam side down in the greased skillet.
Gently brush the tops of the wraps lightly with oil, or spray them with cooking spray. Turn the wraps every minute or two until they are golden and crispy on all sides.
Serve warm, with salsa and/or a creamy cilantro dipping sauce.

Butternut Squash Chili

Ingredients:

  • 2 pounds butternut squash, peeled and diced into 1/2-inch chunks (Note 1)
  • 28-ounce can diced tomatoes
  • 15-ounce can black beans, drained
  • 15-ounce can pinto beans, drained
  • 1.5 cups vegetable broth, plus 2 tablespoons for sautéing
  • 1 cup cooked quinoa
  • 1 yellow bell pepper, diced
  • 2 chipotle peppers in adobo, chopped
  • 5 cloves garlic, minced
  • 1.5 teaspoons paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon table salt
  • 1/4 teaspoon ground black pepper

Instructions:

Sauté: Heat 2 tablespoons vegetable broth in large pot over medium heat. Add garlic, chipotles, and butternut squash to pot, cooking for about 10 minutes, stirring occasionally. Add more vegetable broth if pot gets dry. Add bell pepper, cooking for another 5 minutes.

Simmer: Add black beans, pinto beans, diced tomatoes (including liquid in can), 1.5 cups vegetable broth, quinoa, and all spices (paprika, cinnamon, salt, pepper). Stir well. Bring to simmer. Simmer uncovered for 10 minutes or until butternut squash is tender. Serve.

Chicken Avocado Caprese Salad

Ingredients:

Marinade/Dressing:

1/4 cup (60 mL) balsamic vinegar
2 tablespoons (30 mL) olive oil
2 teaspoons brown sugar
1 teaspoon minced garlic
1 teaspoon dried basil
1 teaspoon salt

Salad:

4 chicken breasts
5 cups Romaine, (or cos) lettuce leaves, washed and dried
1 avocado, sliced
1 cup cherry or grape tomatoes, sliced
1/2 cup mini mozzarella cheese balls
1/4 cup basil leaves, thinly sliced
Salt and pepper, to season

Instructions:

Whisk marinade ingredients together to combine. Place chicken into a shallow dish; pour 4 tablespoons of the dressing / marinade onto the chicken and stir around to evenly coat chicken. Reserve the untouched marinade to use as a dressing.

Heat about one teaspoon of oil in a large grill pan or skillet over medium-high heat and grill or sear chicken fillets on each side until golden, crispy and cooked through. Once chicken is cooked, set aside and allow to rest.

Slice chicken into strips and prepare salad with lettuce, avocado slices, tomatoes, mozzarella cheese and chicken. Top with basil strips; drizzle with the remaining dressing; season with salt and pepper; serve.

Theresa’s Moses’ Famous Italian Wedding Cookies

Ingredients:

6 Eggs

1 cup Sugar

½ tsp. Salt

½ bottle Lemon Extract

6 tsp. Baking Powder

1 cup Oil

6 cups Flour

Instructions:

Mix eggs in bowl until frothy.

Mix in sugar a little at a time.

Add salt.

Add lemon extract.

Add baking powder and 2 cups of flour, mix,

Add oil and remaining a cup at a time while mixing by hand flour until dough is well blended.

Let rest ½ hour and then roll into rope around finger forming small stack.

Scant 1/4 C Lemon Juice

Place all ingredients in the blender or food processor. Blend until smooth.

THERESA’S TASTY TREATS

Sheet Pan Olive Bar Chicken

SERVES: 8 CALORIES: 550

Ingredients: 

  • 8-10 New potatoes, (or other waxy potato) cut into quarters
  • 2 tbsp. Olive oil
  • 1 tsp Kosher salt, divided
  • 2 lbs. Boneless, skinless chicken thighs
  • 1 Small red onion, cut lengthwise into 8 wedges
  • 2 cups Olive bar offerings (peppers, olives, roasted garlic, marinated artichoke hearts etc.)
  • ½ tsp Pepper
  • 1 tsp Onion powder
  • 1 Lemon

Instructions: 

  • Heat oven to 375° F.
  • Spread the potatoes onto a large rimmed baking sheet.
  • Drizzle with1 tablespoon olive oil and ½ teaspoon salt. Toss to coat.
  • Cook on center rack for 15 minutes.
  • Remove potatoes from oven. Nestle in chicken thighs, onions and olive bar offerings.
  • Drizzle with remaining olive oil and sprinkle with pepper, onion powder and remaining salt.
  • Set on center rack and bake for 35 minutes or longer until the chicken is cooked through.
  • Squeeze lemon juice over finished sheet pan and serve.

What is considered a better test aid than caffeine?

October is here and fall is here and it is such a beautiful time of year. One of the things I love about our town and our area is that we get the four seasons so we get to see trees change colors and leaves fall to the ground. The air has that crisp autumn feel to it. THERESA’S TASTY TREATS

  • Smoked Cheese Ravioli
  • 1 (16 ounce) package frozen cheese ravioli
  • 1 cup half-and-half cream
  • 1 cup shredded smoked Gouda cheese
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon white pepper

Step 1

Bring a large pot of lightly salted water to a rolling boil over high heat; stir in the frozen ravioli and return to a boil. Cook uncovered, stirring occasionally, until the ravioli float to the top and the filling is hot, 6 to 8 minutes. Drain.

Step 2

Meanwhile, bring the half-and-half to a simmer in a saucepan over medium heat. Whisk in the Gouda cheese until melted; season with parsley and white pepper. Pour the sauce over the cooked ravioli to serve.

Theresa’s Tasty Treats:

Tatertot Casserole

Yield:

8 servings

1-pound ground beef 

1 pinch salt and ground black pepper to taste

1 (10.75 ounce) can condensed cream of mushroom soup

2 cups shredded Cheddar cheese

1 (16 ounce) package frozen tater tots

Step 1: Preheat oven to 350 degrees F (175 degrees C).

Step 2: Cook and stir ground beef in a large skillet over medium heat until no longer pink and completely browned, 7 to 10 minutes; season with salt and black pepper. Stir cream of mushroom soup into the cooked ground beef; pour the mixture into a 9×13-inch baking dish. Layer tater tots evenly over the ground beef mixture; top with Cheddar cheese.

Step 3: Bake until tater tots are golden brown and hot, 30 to 45 minutes.

Well, the heat has made an appearance. Thanks, and prayers to all the brave firefighters and first responders that risk themselves to protect our land and homes. It is sad to see so many fires this early in the season. Hopefully we will have a wet Monsoon to give us the moisture we so desperately need. THERESA’S TASTY TREATS

Quick and easy Mexican Casserole

1 (16 ounce) can refried beans

¾ onion, diced

5 (10 inch) flour tortillas

1 cup salsa

2 cups shredded Cheddar or Colby Jack cheese

Step 1

Preheat oven to 375 degrees F (190 degrees C). Spray a 9-inch pie pan with non-stick cooking spray.

Step 2

In a saucepan, cook refried beans and onions (to soften them) on medium-high heat for about 5 minutes.

Step 3

Place one tortilla in the bottom of the greased pan. Spread about 1/3 cup of the bean mixture over it. Layer a few tablespoons of salsa over this. Then, place another tortilla over the salsa, and add more of the bean mixture. Follow the beans with a big handful of cheese, spreading evenly. repeat layers, spreading the ingredients evenly over the tortillas. On the top layer, make sure to use lots of salsa and cheese!

Step 4

Bake until the cheese is melted, approximately 15 to 20 minutes.
