HAPPY THANKSGIVING! And Happy November! November is a time to remember and reflect on all that we have to be thankful for, and to kick off the Holiday Season. As we move into the holiday months, the Prescott area is hopping with festivities again this year. We are pleased to announce that the Veterans Day Parade will take place this year in downtown Prescott.  One of the things that I love about the Prescott area is that we have events downtown all year long! THERESA’S TASTY TREATS

Sheet Pan Olive Bar Chicken

SERVES: 8 CALORIES: 550

Ingredients: 

• 8-10 New potatoes, (or other waxy potato) cut into quarters
• 2 tbsp. Olive oil
• 1 tsp Kosher salt, divided
• 2 lbs. Boneless, skinless chicken thighs
• 1 Small red onion, cut lengthwise into 8 wedges
• 2 cups Olive bar offerings (peppers, olives, roasted garlic, marinated artichoke hearts etc.)
• ½ tsp Pepper
• 1 tsp Onion powder
• 1 Lemon

Instructions: 

• Heat oven to 375° F.
• Spread the potatoes onto a large rimmed baking sheet.
• Drizzle with1 tablespoon olive oil and ½ teaspoon salt. Toss to coat.
• Cook on center rack for 15 minutes.
• Remove potatoes from oven. Nestle in chicken thighs, onions and olive bar offerings.
• Drizzle with remaining olive oil and sprinkle with pepper, onion powder and remaining salt.
• Set on center rack and bake for 35 minutes or longer until the chicken is cooked through.
• Squeeze lemon juice over finished sheet pan and serve.
